For deep-cut pavilion colored gemstones, the extra depth prevents the culet from contacting the bottom of the ring mounting, which could cause stone fracture. For shallow-cut diamonds, the jeweler can easily mill down the upper edge of the bezel to match the stone's profile, resulting in a clean, flush-set finish.
